Why do all new restaurants seem to be so loud?

Former New York Times restaurant critic Mimi Sheraton said it seems younger diners feel happier in noisy places.

Her advice for a successful restaurant: “Make it agonizingly uncomfortable. It has to be too noisy, too dark and too cramped and then you’re going to succeed,” she told guest host Steve Roberts on Jan. 20.
